Hibiscus Agua Fresca

Hibiscus Agua Fresca

Look for dried hibiscus flowers at specialty food shops and Latin markets.



ingredients


 1 fresh ginger, 2 1/2" piece
    1 1/3 cups hibiscus flowers
    3/4 cup plus 2 tablespoons sugar





 Preparation

Peel and thinly slice fresh ginger. Combine ginger, hibiscus flowers, and 3 cups boiling water in a medium pot. Let steep at room temperature for 30 minutes. Strain into a large pitcher, discarding solids. Add sugar; stir until dissolved. Add 8 cups cold water. Fill glasses with ice; pour agua fresca over and serve. DO AHEAD: Can be made 3 days ahead. Cover and chill.








Celery, Apple, and Fennel Slaw

Celery, Apple, and Fennel Slaw

Our update of the Waldorf salad has so much crunch, we skipped the walnuts. Serve with grilled pork, fish, or chicken.


 ingredients

3 tablespoons extra-virgin olive oil
    2 1/2 tablespoons apple cider vinegar
    1 1/2 tablespoons coarsely chopped
    fresh  tarragon
    2 teaspoons fresh lemon juice
    1/4 teaspoon sugar
    3 celery stalks, thinly sliced diagonally,
    plus  1/4 cup loosely packed celery leaves
    2 small fennel bulbs, thinly sliced crosswise, plus 1 tablespoon chopped fennel fronds
    1 firm, crisp apple (such as Pink Lady, Gala, or Granny Smith), julienned
    Kosher salt and freshly ground black pepper
.



Whisk first 5 ingredients in a medium bowl. Add celery and celery leaves, thinly sliced fennel and chopped fennel fronds, and apple; toss to coat. Season to taste with salt and pepper.

   Vegetable oil cooking spray
    1 green bell pepper, chopped
    1/2 medium red onion, chopped
    2 cloves garlic, chopped
    1 bone-in skinless chicken breast (about 6 ounces)
    1/2 cup store-bought barbecue sauce
    1/4 can (7 ounces) chipotle peppers in adobo sauce
    8 small whole-wheat buns 

    (such as Pepperidge Farm Wheat  Sliders)
    1/2 cup grated aged cheddar
    8 cherry tomatoes, sliced
    2 cups sprouts (such as arugula or broccoli)




  Preparation

Coat a medium saucepan with cooking spray. Cook bell pepper, onion and garlic in pan over medium heat, stirring, 3 minutes. Add chicken, barbecue sauce, chipotles and 1/4 cup water; cover and simmer until chicken reaches an internal temperature of 165°:F, 25 to 30 minutes. Remove chicken from sauce; place on a plate to cool for 5 minutes. Use a fork to pull meat off bone and shred; return meat to pan and toss to coat with sauce. Heat oven to 400°F. Open buns and set on a baking sheet covered with foil. Distribute chicken evenly among bottom half of each bun (about 2 tablespoons per bun); top each with 2 tablespoons cheese. Bake until cheese melts and bubbles, 4 to 5 minutes. Top with tomatoes, sprouts and bun cap; serve immediately.

ingredients

    1 (3 1/2- to 4-lb) chicken, cut into 8 serving pieces
    1 tablespoon olive oil
    1 large onion, chopped
    1 large red bell pepper, cut into 1/2-inch pieces
    4 garlic cloves, minced
    2 teaspoons paprika
    2 cups long-grain white rice
    1 1/4 cups dry white wine
    1 (14-oz) can diced tomatoes including juice
    1 3/4 cups chicken broth
    3/4 teaspoon crumbled saffron threads
    1 bay leaf (not California)
    1 cup frozen peas (not thawed)
    1/2 cup pimiento-stuffed green olives, coarsely chopped






Garnish: chopped fresh flat-leaf parsley

Preparation



Pat chicken dry and season with salt and pepper. Heat oil in a 12-inch heavy skillet (at least 2 inches deep) over moderately high heat until hot but not smoking, then brown chicken on all sides, about 12 minutes total. Transfer chicken with tongs to a plate.

Pour off all but 2 tablespoons fat from skillet and add onion, bell pepper, and salt to taste. Cook over moderate heat, stirring, until softened, about 7 minutes. Add garlic, paprika, and rice, then cook, stirring, 1 minute. Add wine and boil, uncovered, 2 minutes. Stir in tomatoes with juice, chicken broth, saffron, and bay leaf. Nestle chicken in rice, adding any juices from plate.

Cook, covered, over low heat until chicken is cooked through, rice is tender, and most of liquid is absorbed, about 15 minutes. Remove from heat and stir in peas, olives, and salt and pepper to taste. Cover skillet and let stand 10 minutes. Discard bay leaf.

    low-fat chicken broth 2½ cups
    Saffron or SazónTM for color
    tomatoes,3 medium chopped
    frozen peas 1 cup
    frozen corn 1 cup
    frozen green beans 1 cup
    Olives/capers for garnish (optional)

Directions for cooking Rice with Chicken in Spanish Style
 

cook olive oil over medium flame in a non stick pot. Keep together onion, garlic, celery, red/green pepper, and mushrooms. Cook on medium heat, stirring often, for three minutes or until tender. mix whole grain rice and sauté for 2–3 minutes, stirring constantly to mix all ingredients.Now add chicken, chicken broth, salt, water, Saffron/SazónTM, and tomatoes. Bring water to a boil.Cook on meduim heat, cover, and let the casserole simmer until water is absorbed and rice is tender, about 20 minutes. mix in peas, corn, beans and cook for 8 to 10 minutes. When everything is hot, the casserole is ready to serve. decorate with olives or capers, if desired.

Mango Crisp

Mango crisp feasts taste buds with juicy mango and crispy chunks together. This recipe is easy to make at home within minutes.

Ingredients:

  • 5 cups ripe mangoes
  • 1/4 cup softened butter
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup flour

Method:

  1. Peel and slice mangoes
  2. Add 1 teaspoon of the nutmeg, the cinnamon, and lemon juice in sliced mangoes
  3. Place the mixture in a buttered glass baking dish of 10 x 6 x 2 inch
  4. Set aside
  5. Now blend butter and brown sugar in a smooth mixture
  6. Put the flour and the remaining 1/2 teaspoon of cinnamon in butter mixture
  7. Mix until crumbly
  8. Sprinkle the crumble topping evenly over mango slices
  9. Cook in microwave oven for 9-11 minutes on high power, rotate dish after 5 minutes
  10. Serve warm or cold, with whipped topping or ice cream.

Banana Biscuit Sweet Temptation

Ingredients:

  • 2 packets of biscuit (Tiger, Marie or Super)
  • Butter
  • Condense Milk
  • Bananas
  • Thickened Cream, whipped
  • Grated dark chocolate to garnish

Method:

  1. Place the biscuits in a food processor and pulse to make crumbs.
  2. Heat a teaspoon of butter in fry pan and add biscuit crumbs.
  3. Make a layer of biscuit crumbs in a bowl and top it with a tablespoon of condense milk
  4. Cut 5 or 6 bananas in slice and arrange them in a layer on condense milk
  5. Lastly, top it all with thick whipped cream and sprinkle grated dark chocolate
  6. Chill it for an hour and enjoy this deliciously yummy banana biscuit sweet temptation with family.

Murgh Chaney is purely desi Lahori nashta (breakfast) served with naan, individuals of all genre love to eat. Following the recipe given here you can make this tempting desi meal at home.

Ingredients:

  • 4 chicken pieces
  • 500 gms chickpeas
  • 2 medium onions
  • 2 medium tomatoes
  • 1 inch ginger piece
  • 1 tsp ginger-garlic paste
  • 2 green chilli
  • 2 tbsp yoghurt
  • 10 cloves
  • 2 cardamom pods
  • 12 peppercorns
  • 2 cinnamon sticks
  • 2 bay leaves
  • 2 petals of star anise
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tbsp coriander seeds
  • 1/4 tsp tumeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp hing
  • 1/4 cup chopped coriander leaves
  • 2 tbsp ghee
  • 2 tbsp oil
  • salt to taste
  • 2 boiled eggs (optional)

Method:

  1. Marinate chicken with yoghurt, ginger-garlic paste, 1/8th tsp of turmeric powder and salt. Cover and keep aside for about 15 minutes.
  2. Slice 1 onion and the 1 fresh ginger and keep aside.
  3. Heat ghee in a frying pan. Add 5 cloves, 6 peppercorns, 1 bay leaf, 1 cinnamon stick, 2 cardamom pods and the star anise petals. When these spices become dark add the sliced onions and ginger.
  4. Fry these spices till onions become slightly brown. Add the cumin seeds, fennel seeds and the coriander seeds and mix well.
  5. Remove from heat and let it cool. When this mix cools down, add the remaining turmeric powder, red chilli powder and grind to a fine paste.
  6. Slice the other onion, tomatoes and green chilli. Keep aside.
  7. Heat 2 tbsp of oil in cooking pot. Add the remaining whole spices. When they become dark add the green chilli, hing and onions.
  8. When onions become translucent, add the tomatoes. Cover and cook on medium flame for a couple of minutes.
  9. Add the marinated chicken and cook on medium flame.
  10. When this spice is ready add it to the chicken and mix well. Add cooked chickpeas. Cover and cook.
  11. Once the chicken is cooked check the salt
  12. Add bolied eggs and garnish with coriander leaves
  13. Serve hot with naans.

Rich Chocolate Fudge Brownies





Ingredients:

  • 1 cup butter
  • 4 (1 ounce) squares unsweetened chocolate
  • 2 cups white sugar
  • 4 eggs
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups chopped walnuts
  • Twix

Method:

  1. Preheat oven to 350 degrees F. Grease a 9x13 inch baking pan.
  2. In 3-quart saucepan over very low heat, melt butter or margarine and chocolate, stirring the mixture constantly. Remove from heat, and stir the sugar into the chocolate. Allow the mixture to cool slightly. Beat in the eggs one at a time, mixing well after each, then stir in the vanilla.
  3. Combine the flour and salt; stir into the chocolate mixture. Fold in the walnuts and also add pieces of Twix chocolate for more chocolaty feeling. Spread the batter evenly into the prepared pan.
  4. Bake in oven 30 to 35 minutes. Brownies are done when toothpick inserted into center come out clean. Cool in pan on wire rack.

Ingredients:

  • 1 tablespoon Vegetable Oil
  • 1 pound chicken or beef Steaks
  • 2 cups green Pepper and chopped Onion
  • 1 1/2 tablespoon Unsalted Butter
  • 1 1/2 tablespoon All-Purpose Flour
  • 1 cup Milk
  • 1/4 teaspoon Freshly Ground Black Pepper
  • 3/4 pound Cheddar Cheese, grated
  • 1 tablespoon Chopped Chipotle Peppers (jalapeno dried in flame)
  • 1 tablespoon Abodo Sauce (given below)
  • 1 loaf(s) Baguette (French bread), quartered and split
Adobo sauce recipe:
Prepare a raw sauce of pepper, oregano, salt and garlic in vinegar.

Method:

Recipe Chipotle Cheesesteaks:
  • Heat oil over medium heat
  • Add thinly sliced steaks and pepper-and-onion mixture and cook until heated through, about 5 minutes. Set aside
  • For cheese sauce, melt butter in a medium saucepan over medium heat. Add flour, whisking constantly until bubbly, about 1 minute
  • Slowly whisk in milk until thickened, about 3 minutes
  • Stir in black pepper, cheese, chipotle peppers (smoke dried jalapeno), and adobo sauce.
  • Divide steaks and pepper-and-onion mixture among 4 baguette slices (French bread easily available in market)
  • Top with cheese sauce and remaining 4 bread slices
  • Serve hot

Chocolate Cheese Cake

This rich chocolaty cheese cake is easy to make at home without baking and develops an irresistible taste of cheese and chocolate on tongue.

Ingredients:

  • 150g (5 oz) digestive biscuits
  • 45g (1 1/2 oz) butter
  • 110g (4 oz) caster sugar
  • 120ml whipping cream
  • 150g (5 oz) dark chocolate, melted and cooled
  • 2 tablespoons cocoa powder mixed with a little hot water
  • 1 (200g) cream cheese

Method:

  1. Crush the digestive biscuits and mix with melted butter and 1 tablespoon of the caster sugar
    Press into an 18cm (7 in) cake tin and refrigerate.
  2. Whip cream until soft peak stage. Add cooled melted chocolate, then the cocoa powder mix.
  3. Blend well and set aside.
  4. Beat the cream cheese and remaining sugar together
  5. Fold in cream/chocolate mixture and mix thoroughly.
  6. Spread into tin on top of crushed biscuits. Freeze for one hour.
  7. Refrigerate for about 30 minutes
  8. Serve cool.

Method:

  1. Preheat oven to 400°F (200°C). Line a muffin pan with paper muffin cups.

  3. Stir in 3/4 cup wheat germ, and set aside
  4. In a large bowl, combine eggs, milk, juice, sugar and oil.
  5. Add dry ingredients all at once and stir lightly until liquid is absorbed; batter should be lumpy.
  6. Stir in orange zest and 3/4 cup almonds.
  7. Divide batter among muffin cups and sprinkle tops with remaining almonds and wheat germ.
  8. Bake 12 to 15 minutes or until a toothpick comes out clean.
  9. Remove from pan and let cool. Serve with almond butter or “cream cheese.”

Primavera Pasta

Ingredients
  • 1 8-ounce package fresh pasta, 
  • such as fettuccine
  • 1 tablespoon olive oil
  • 1 pound asparagus, trimmed, cut into thirds
  • 1 cup fresh peas
  • 8 fresh ramps, trimmed, cut into thirds
  • 1/2 teaspoon salt
  • 8 ounces fresh goat cheese, cut into pieces
  • 4 slices of prosciutto, 
  • trimmed and thinly sliced
  • Zest of one lemon
  • 1 tablespoon lemon juice
  • 1/4 teaspoon freshly ground pepper

Directions

Cook the pasta according to the package instructions. Reserve ¼ cup of the pasta water, then drain the pasta and set aside. Heat the oil in a large skillet over high heat. Add the asparagus and cook 1 to 2 minutes until the asparagus begins to brown and soften.
Add the peas, ramps, and salt and cook an addition 1 to 2 minutes longer. Add the pasta and the pasta water. Toss well to coat. Add in the goat cheese, prosciutto, lemon zest and juice and black pepper. Toss well and serve immediately.By Alisha

Crunchy Chicken Cheese Sandwiches

This delicious small crunchy sandwich is a quick and healthy alteration to satisfy your pizza desires!

Ingredients:

  • 1 small onion, finely chopped
  • I medium tomato, diced
  • Jalapeno pepper slices
  • 1 Chicken breast piece
  • 1 cup shredded cheddar cheese
  • Salt to taste
  • Crushed red peppers
  • 4 Bread slices

Method:

  1. Preheat your oven’s broiler.
  2. Cut chicken breast piece into small cubes and fry them with salt, black pepper and vinegar, add onions and fry a bit more.
  3. In a medium bowl mix tomatoes, jalapeno peppers, cheese, salt and crushed red peppers. Also mix the fried chicken cubes and onions.
  4. Arrange slices of bread on a baking sheet or broiling pan. Top each one with 1 with ¼ of the mixture, spreading out to the edges.
  5. Grill for 4 to 5 minutes or until cheese melts and bread becomes crispy and crunchy. Watch closely to prevent burning. Serve hot with tomato ketchup and enjoy your small bread pizzas.By Alisha

Chicken Malai Tikka

Desi Food

Ingredients:

1 tsp lemon juice
1/2 tsp salt
2 boneless and skinless chicken breasts
2 tbsp yogurt
30g butter
1 tbsp double cream
1tbsp ginger garlic paste
3 green cardamoms
1/2 tsp ground cumin
1/2 tsp freshly grated nutmeg
2 green chillies finely chopped
1 tbsp vegetable oil
2 tbsp Cheddar cheese
 
Recipe:
  • Marinate boneless chicken pieces with lemon juice and salt
  • Blend yogurt with half of the butter, cream, ginger garlic paste, cardamoms, cumin, nutmeg, chillies, oil, and cheese into a smooth paste
  • Pour over the chicken, making it all well coated, and marinate for 1 hour in the refrigerator.
  • Take 4 - 6 wooden skewers and soak them in cold water for 15 minutes to prevent burning.
  • Skewer the chicken and barbecue and grill under a preheated grill for 10 minutes on each sid
  • until light brown and cooked or simply bake in a preheated 180°C / 350°F / gas mark 4 oven for 15 minutes or until the chicken is cooked.
  • Halfway through cooking brush with the remaining melted butter

Lemon Tart

Ingredients:

  • Candied Zest:
  • 1 cup lemon zest, julienned
  • 1 cup sugar
  • Crust:
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened at room temperature
  • 1/2 cup sugar
  • 1 large egg, beaten
  • 1/4 teaspoon almond extract
  • 1 Tbsp lemon juice

Method:

  1. Candied Citrus Zest
  2. Place lemon zest in a saucepan and cover with water by 1/2 inch.
  3. Bring to a boil. Remove from heat, drain the water. Fill up with water again and repeat. Bring to boil, remove from heat, then drain. Add water again, this time adding the sugar as well. Simmer for 30 minutes, drain.
  4. Spread the zest out on a sheet of parchment paper. Let dry overnight at room temperature (do not put in the refrigerator). The next day toss the zest with a little more sugar.By Alisha

Chicken Cheese Goujons with Tomatoes

A delicious chicken recipe to make your kids go wild with happiness!

Ingredients

  • 1 skinless chicken breasts
  • plain flour
  • 1 large free-range egg
  • 2 -3 Garlic cloves
  • 2 -3 Green Chillies
  • Cheddar cheese, finely grated
  • Fresh white fine breadcrumbs
  • Vegetable oil
For the thyme tomatoes
  • 300g cherry tomatoes, some halved, some quartered
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp roughly chopped fresh thyme
  • 1 garlic clove, finely chopped
  • 1 tsp vinegar
  • 1 tsp light brown sugar

Method

  1. Slice chicken breast into small strips. Season the flour and place in a shallow bowl. Whisk the egg with the finely chopped green chillies and garlic in another bowl and then combine the crushed cheddar cheese and breadcrumbs in a third.
  2. Roll the chicken strips in the flour; shake off the excess, than dip in the egg. Finally, roll in the cheese crumbs and deep fry till golden brown.
  3. For the thyme tomatoes, place the tomatoes in a bowl with the rest of the ingredients and season. With the back of a fork, gently squash to release some juices and combine the flavors. Set aside to marinate.
